What defines a bar in this day and age? This is a question our team debated extensively before we decided that, simply, a bar is a place where drinks come first. That's not to say this year's Best Bars don't excel at the rest – many of them wear many hats very well – but these are the places to count on to best quench your thirst in the West, whatever your flavour.
