Given the preponderance of brilliant restaurants in the Margaret River Region and the capacity of the region’s large legacy wineries to support high end culinary programs and expensive chefs to run them, it’s not surprising that WA’s premier wine region keeps throwing up some of the best chefs in WA.
Bringing accomplished and storied chefs to WA is also important symbolically – a message to young chefs that WA is a place to be and to perhaps reduce or even reverse the diaspora of young talent to the Eastern States.
Our regional chef of the year, Seth James, is plating up extraordinarily accomplished dishes. Yes, it’s technically precise, executed with flair and poise and enormous maturity, but at the core of our Regional Chef Of The Year’s cooking, is the customer.
