Eagle Bay’s Hoops Project explores the vagaries of mixed fermentation and time – Blend 001’s Farmhouse base slumbered three years in stainless. Here, yeast and desirable bacteria embolden rustic charm and curious elegance. The palate arcs as if passing seasons – at first bright and generous, then lean and moreishly arid. Preserved lemon, white pepper and fleeting pineapple hum with integrated Brettanomyces complexity. This is passionate back-shed tinkering, but all it really wants is sea-sprayed skin, snacks and not a lot to do.
