In his fifth year leading the kitchen at Leeuwin Estate, though, that experience is really showing. It’s in how he so seamlessly melds creativity, technical prowess and fine Margaret River produce, without ever losing sight of the single most important part of a restaurant: the diner. It’s there in a subtle dish of raw scallop with crème fraîche, kohlrabi and horseradish, a brioche snack that’s like savoury bread and butter pudding and in his approach to seafood and saucing, which remains flawless.
