Tenacious in approach, Throsby’s work is illustrated with creative lists that lean heavily into local producers while selecting carefully from further afield. Colourful, broad wine programs have followed, tapping the zeitgeist while flexing with the individual needs of each venue. A gun, with fresh ideas and an individual take on the role of sommelier.
