Fleur 2021 Winner
Let’s get it out of the way: Fleur isn’t exactly new. In fact, the flagship fine-diner at The Royal opened right at the start of 2020. But after so many shutdowns, reopenings and restrictions – and a year off from the WA Good Food Guide – we thought it was only fair to broaden the scope to venues that had opened since our 2019 edition. Fleur rose to the top not for excelling in one area, but in delivering across the board. There’s the decor, which is both opulent and fresh, there’s Daisy Case’s broad drinks list to go with energetic, youthful service. Then, of course, there’s the cooking, which is ambitious, restrained and delicate all at once. A package deal if ever there was one.
