Industry leadership can mean many things to many people. For us, an industry leader is a person whose leadership spills out from their kitchen or dining room and in to the wider world. A hospitality industry leader has charisma backed up by substance and a passion for setting agendas and educating young chefs and restaurant managers. By their actions they inspire others and cause us all to re-think our ideas and attitudes to produce, sustainable practices, flavour, food and food service.

Our winner of the 2017 Industry Leadership Award does all these things, but does so quietly and with trademark humility. Despite his self-deprecating personal style, he has a laser-guided ambition to get chefs and restaurateurs and, we customers, to be more attuned to what it is we do when we eat. He is not just a green theorist. He is a first class chef – one of the best of his generation – who has turned commercial cookery into a road show, so that he may better spread his message.

He has been an inspiration for some of Perth’s most promising young chefs, who willingly follow him to the far reaches of the West Australian outback to cook long table dinners under the stars and forage for little-known indigenous vegetables, roots and herbs.
