John Parker 2021 Winner
While The Standard in Northbridge keeps on keeping on, it’s John Parker’s work at The Royal that sees him take out this award. Leading a restoration that was forward-thinking yet respectful to the CBD venue’s long history, Parker brought not one, but three major venues to the lovingly restored space, then filled in the gaps. Each part of Fleur, wine bar Willi’s and the pub complement each other, excel at both food and drink and, crucially, add more threads to the fabric of the city. A worthy winner.
