Originally from Melbourne, Simon Digby moved to Bali nearly four years ago with a vision to create something that resonates on a global scale.

With both of his parents migrating from Malta at a young age, Simon was born and raised in Melbourne, where his diverse career began. Simon’s journey eventually led him to Bali, where he launched Further Hotel along with co-founders Claudio, Martine and Tim. 

He lives in Pererenan with his wife of 21 years and their three children. Here, we dive into Simon’s favourite spots in Pererenan and the places that inspire him.

Let’s start close to home with your Pererenan spots:

What’s your favourite cafe for breakfast in Pererenan when you’ve got time to ease into the day?

Portion Rooftop Pool + Bar, it’s attached to Further, but that’s not the only reason it’s my go-to spot for breakfast. When we built it, we didn’t realise how you kind of escape the busyness of Pererenan because it’s set back from the street. The food is great, the design [by Amy Wenden and Martine McGrath] is amazing, and you’re in this beautiful little oasis where you can have some thinking time without being overstimulated.

Where is the best coffee in Pererenan—your go-to daily spot, or somewhere you take friends?

I’ve been a fan of St Ali for over 15 years. I discovered it in Melbourne when I lived in a warehouse off Yarra Street—right where the first St Ali was born. Through my journey, I met the owner, Salvatore, and Aston, who owns the brand with Salvatore in Jakarta, and when I was setting up Further, it just made sense to bring St Ali to Bali. Having my favourite coffee spot here, it was a no-brainer.

What about a long lunch that always hits the spot?

Zali has really healthy, light food. It’s nice to have something light and healthy on the island, and there’s nothing quite like it here. The food is quick, easy, and well-priced. Lebanese cuisine, born in Bali. They do a great sunny-side-up egg and meat dish, but the chicken shawarma is my favourite.

You’re not in the mood to cook, but you want a laid-back dinner. Where do you go? 

Bar Vera does beautiful lamb and octopus, and a great potato bread. My go-to is a Negroni, sitting outside, watching people walk past with the skewers and bread. It’s the best Negroni on the island, for sure.

Then there’s also Della Terra, a local hangout in the more residential side of Pererenan, away from the beach. It’s like a New York-Italian-inspired, very authentic Osteria. The chef, Vinny, is from Syracuse in Italy, but grew up in America, so the hospitality is very approachable. The menu changes every day, and you’re guaranteed the freshest pasta, meatballs, and cotoletta. It feels like it’s been there for 50 years.

What about a drink at golden hour?

Times Beach Warung is a beach club, but not pretentious. It’s got bean bags, no minimum spend, and no bottle service. You can bring your dog, which makes it great for locals and tourists alike. I feel like I’m on holiday there, and I’m sure tourists feel the same. It has a great vibe and the food is good—whether it’s calamari or salads, it’s a no-brainer.

And if you want to party, where do you go for a night out?

I’m more of a morning person, but Shady Fox is a really cool speakeasy in Pererenan. They’ve got excellent live local music and great cocktails.

Where do you go to unwind or reset?

If I want to reset and get inspired on my own, I go to Pig Stone Beach in Kendungu, about 30 minutes from Pererenan. If I’m with my family, I go to Candi Dasa.

What’s your favourite local escape for a day trip or weekend?

Candi Dasa is a couple of hours away from Pererenan, and it’s perfect for a weekend getaway. Lovina, on Bali’s north coast, is another favourite. You can watch dolphins, snorkel, and just relax.

If friends are visiting from overseas, where’s the one “wow” spot you always take them?

Kendungu and Pig Stone Beach—it feels like Bali 30 years ago. Authentic, unpretentious, and underdeveloped. Close by, you’ve got Little Ripper, another place that has that old-school Bali feel.

Where do you go when you need a reminder of why you love living here?

My daily beach walk from Pererenan to the end of Canggu. It’s when I switch off from work and feel like I’m on holiday within a minute.
