At the heart of the State Buildings, you could sit in or on the periphery of the Wine Store looking to the grand Postal Hall and imagine that you were anywhere but Perth, this heritage redevelopment still feeling like an uncommon landmark and civic thoroughfare. But your attention is likely pulled back by what’s going on inside, with its black-painted interior and monumental wall of wine. A central strength of the restaurants throughout the building has been Director of Wine, Emma Farrelly, with her passion for vino and a mission to spread the word. The joy of the Wine Merchant is pulling the thread on stories from the compact but expertly curated by-the-glass list, going wide and by the bottle, drinking in and taking out. You may enter thinking you’ll have a single glass to then find yourself grazing on baked brie and half a dozen oysters, discussing a wine label that’s new to you in a region you thought you knew inside out. Weeks later you’ll find cryptic iPhone notes reading ‘NeoTeric’ and ‘Palacios Remondo’ and that’s your cue to head stop by for another glass or three.
