As addresses go this Rokeby Road property probably wouldn’t raise an eyebrow for most, but it’s one of the most storied in Perth dining, the former home of Witch’s Cauldron.
This could be your lightbulb moment, thinking about garlic prawns and its 46-year tenure. The new occupants talk of the space being ‘rebirthed’. Period features are retained alongside plush booths upholstered in cinder-orange tones that hint to another era. There’s covered outdoor dining, perfect for long lunches. More recently the home of Dilly Dally and Bar Loiter, the space similarly has a restaurant at the front and bar at the back, The Foreign Office. It’s perhaps owner Simon Devlin, a noted cigar dealer, who has imagined a restaurant that unapologetically celebrates appetites; freshly shucked oysters, an invitation you really can’t refuse. There’s staples of modern menus like kingfish crudo, but also a caviar selection that goes from a bump of white sturgeon to a tin of beluga. Heading up the kitchen is Charlie Vargas, a New York born chef who has made his mark in Perth at the likes of Santini Bar & Grill and TOMA. So, he knows his way around a grill. While you might opt for lobster or Glacier 51 Toothfish, this is very much Tomahawk and T-Bone territory. The New York baked cheesecake is something of a signature for Vargas as much as the restaurant. It could be the garlic prawn for a new generation. The Embassy certainly feels like it’s built to last.
