A kitschy name maybe but there’s depth upon depth at this South West bar.
It could be a case of blink and you’ll miss it with this compact bar on Margaret River’s main drag; part of a wider trend in the South West to bars that can go toe-to-toe with their city cousins. Rhum Burgundy helps you stay classy with stellar cocktails and a wine list that bears a second and third look. Co-owner Billy Phillips put cocktails on the map in Margs a good few years back with his tenure at Morries. Expect much of the same here, from barrel-aged negroni to seasonal cocktail menus and a bartender having fun – don’t be shocked to see sous-vide machines, culinary siphons and blowtorches at work. And then there’s that wine list, which points to the other side of the ownership and LS Merchants winemaker Dylan Arvidson in particular. Sure, you’ll find his wine featured but there are also spotlights on international labels and the likes of mythic Clare Valley producer Wendouree. A list for lovers of the craft and those who engage in it, with no hint of wine snobbery.
