These noodles trace their origins to the city of Lanzhou in northwest China, and come in a variety of thicknesses, known for being served in a distinctive clear broth (as opposed to its soy-sauce-based cousins). Start with the traditional signature beef noodle soup, a generous tangle of noodles served with a dash of chilli oil, coriander, spring onion and slices of beef. As the thermostat climbs, reach for the noodles with soybean paste, pork mince and batons of carrot and cucumber – a fresh summer makeover.
