Now a mainstay of Margaret River, Normal Van charms, nailing the simple stuff.
There’s more here than the promise of fancy burgers and fried chicken. A hospo team with real cred, Jess Waldron and Rob Webster, have grown Normal Van from a back-porch pandemic hustle to a bricks-and-mortar go-to which is casual up front, big energy in the back. Diner classics and creative specials lean into locally sourced ingredients. Pair grass-fed beef burgers, dill pickles and hot sauce on squishy potato brioche buns with next-level sides like a generous, crisp apple and fennel slaw or fried, creamy mac and cheese with smoked brisket. Chips aren’t bought in by the bag; they’re house-cut and double-fried, and it makes all the difference. Caesar salad flips the script, adding maple-soaked bacon and buttery brioche croutons for panache. For drinks, it’s Waldron’s own releases from Jingalup Wines, a sour watermelon margarita, or sweet iced tea. Add razor-sharp attentiveness from staff, a spot on the terrace, a breakfast service in high-season (with a breaky burger to rule them all), and you’ll understand why it’s the talk of the town.
