The bustling cantina takes it up a notch with dishes such as fresh ceviche which relies on both the catch of the day and tiger’s milk – the traditional Peruvian citrus-based marinade that delivers a kick of spice as it cures. There are of course empanadas of different stripes but the seafood excels: octopus with housemade olive tapenade, or scallops with melted parmesan, citrus, aji amarillo butter and salsa verde, giving a sense of Western Australia’s coastal advantage. Pay your respects on the bebida front by diving into one of their pisco-centred drinks, the sour of course being the classic.
