A reason to visit The Mangrove Hotel, overlooking the stunning Roebuck Bay, has always been the view. Especially when everything aligns to glimpse ‘the staircase to the moon’, one of Broome’s many natural phenomena, as the full moon rises over exposed tidal flats creating the vision of a staircase.
Johnny Sausage, the hotel’s Italian-inspired eatery, doesn’t just trade on that vista, but delivers a good dose of Italian brio. Dimly lit, the dining room is lively with visitors discovering the ways of ‘Broome Time’ (IYKYK). It pays to load up on antipasti dishes with a leaning to the sea, like crudo of kingfish and local prawns, punchy vitello tonnato and West Australian scallops with guanciale.
There are comfortingly classic pasta dishes with added flair – cacio e pepe served from a wheel of pecorino – and dishes perfect for sharing. Think, a hefty cotoletta with classic notes of sage and lemon, or wagyu served with triple-fried rosemary potatoes. To top it all off, the wine list is unapologetically Italian as is the service.
