A reason to visit The Mangrove Hotel, overlooking the stunning Roebuck Bay, has always been the view. Johnny Sausage, the hotel’s Italian-inspired eatery, doesn’t just trade on that vista, but delivers a good dose of Italian brio. Dimly lit, the dining room is lively with visitors discovering the ways of ‘Broome Time’ (IYKYK). It pays to load up on antipasti dishes with a leaning to the sea, like crudo of kingfish and local prawns, punchy vitello tonnato and West Australian scallops with guanciale.

There are comfortingly classic pasta dishes with added flair – cacio e pepe served from a wheel of pecorino – and dishes perfect for sharing. Think, a hefty cotoletta with classic notes of sage and lemon, or wagyu served with triple-fried rosemary potatoes. To top it all off, the wine list is unapologetically Italian as is the service.
