Step off Manning’s unassuming Welwyn Avenue and recalibrate in this hushed, minimalist dining room where nothing shouts and everything is considered. A space that invites quiet, mindful dining. A newcomer to Perth’s Japanese dining scene, Hiyori sidesteps the usual sashimi-yakitori-tempura formula. Instead, it leans into a bistro-style approach where local produce takes the lead. The bento boxes signal this is something different – grilled cod brushed with house miso, or broiled salmon cured gently in shio koji. But it’s the shared plates where the kitchen really shows its hand. Okonomiyaki arrives crowned with fluttering katsuobushi. Aburi scallops, kissed by flame, rest on pickled wakame. Tuna tataki comes ringed in sesame with a bright ponzu, whilst mackerel – often overlooked – is lifted with a sharp negi shoga salsa. And it’s not all from the sea – Futari Wagyu with miso béarnaise caps off the menu with class. Thoughtful and built with heart, Hiyori is a welcome new voice in Perth’s ever-evolving Japanese scene.
