A stellar team are raising the bar in Subiaco.
This outpost of a home-grown star, which started life at a brewpub in Byford, draws all-comers as a true destination and is going from strength to strength. It’s not overly crafty, perhaps putting more value on a solid core range rather than taking a more niche approach to please the fan boys. That’s not to say the team doesn’t take the opportunity to experiment or get real runs on the board – co-founder and brewer Will Irving was one of the key architects of the rise of Feral Brewing. The spacious courtyard is an obvious pull for many as is the food. In what might feel like an unlikely scenario for a Subiaco brewpub, the menu was partly designed by a former head chef of three-Michelin-starred Noma in Copenhagen (we’re talking Ben Ing, creative consultant at Sans Pants which also operates Si Paradiso and El Grotto). Ing understands the brief with dainty moreish gildas, excellent double cheeseburgers and a menu that doesn’t strain under its own weight.
