Two years in the making, Fallow sees chef Stuart Laws join forces with Joel Beresford and Daniel Sterpini of craft beer community staple, Dutch Trading Co. The two-storey heritage building in Northbridge has been reincarnated as a 248-seat pub that’s as serious about drinking as it is eating. Custom cocktails and a wine list that leans to Western and South Australia are one thing but look beyond the tap offering and you’ll find a list of rare cellared beers that crosses borders and styles.
Dine by the fire-driven kitchen, upstairs in the bar or out on the balcony. The menu is a crowd-pleasing riff on Laws’ Brown Street Grill, and that’s by no means a bad thing. As you would expect from Laws, dry-aged steak features heavily, with a price-point that’s in keeping with the surrounds. Snacks are strong with the bao bun style prawn toast a highlight. Steak aside, main plates are on the lines of quality pub fare from crudo to gnocchi, a requisite burger, and half chickens. Our tip: save room for the rum and anise roasted pineapple with coconut sorbet. A perfect sweet treat to end your meal.
