The name R.C Sadlier is faintly painted across the front of this Henry Street bar, a reference to the Customs, Shipping and Forwarding Agents that called this building home in the late nineteenth century. Step in and you could be in that era or well before, ropes and other ocean-going paraphernalia hanging in the dimly lit interior. Candlelight flickers and discarded peanut shells may crunch under foot. You’d be forgiven for asking when over the last 150 years it opened and for your surprise when told 2019. Noted bar designer Ashley Sutton has dreamed up high end bars across Asia, and no one could accuse him of following the crowd with Darling Darling. But it’s not just a case of style over substance. You’ll find a cracking pint of Guinness, barrel aged negronis, and rum straight or in several takes on classic cocktails. A curiosity for port city first timers, a local for others, visit on a Sunday and you might catch a fiddler in action.
