Bucking the trend in the brewery space, Bright Tank teamed up with chef Stuart Laws to deliver a dining experience that’s appropriate to the location but elevated in its outlook. Pull up on this East Perth backstreet and you’re likely to find a crowd of punters outside enjoying the tank-fresh beers. No surprises there, but head inside and discover there’s a serious kitchen and a team working their custom-built JAGRD charcoal grill for all its worth. Woodfired veggies, like a showstopping miso butter hispi cabbage, feature alongside, say, a one-kilogram Bluff Knoll T-bone or Korean-style short ribs. If you just want to graze, there are snacks and small plates: order up on the oysters and wagyu beef skewers. Whatever you choose, you’re safe in the knowledge you won’t go thirsty.
