Bakery culture in Western Australia is strong, whether it’s the classic expression of a neighbourhood joint selling breads, pies, and lunch rolls with a distinctly Anglo-vibe, or those that are Franco leaning. If you err to the sweeter side, we have pastries that take their cues from Europe and Asia, and while you may think bagels have only made in-roads in recent years, there’s decades-long purveyors of the boiled and baked at work in Perth.
Miller + Baker
After discovering the quality taste of freshly milled flour while travelling in Denmark, Mark Taylor returned to Perth to establish Miller + Baker. Here he provides locals with something that only a handful of bakeries in Australia offer: goods baked on-site using flour also milled on-site. Though only available on weekends, The Sourdough Miche, made with the first harvest of WA Barber wheat and marbled with malt is a standout choice for flavour and sustainability.

Pelican Croissanterie
No matter the hour, there’s always a crowd gathered outside this suburban gem in Willagee, perched on straw bistro chairs or queuing for their pastry fix. Inside, trays of just-baked croissants and danishes—both sweet and savoury—fly out the door as fast as they’re filled. Specialising in laminated pastries, the offering changes with the seasons, but if you spot the Maple Bacon and Black Pepper Croissant, don’t think twice. It’s a sweet-savoury masterstroke. The icing on the cake (croissant?) is that every coffee also comes topped with a bite-sized financier.

Kilo Bakery

Don’t leave without a loaf of their Kalamata olive sourdough.

Hunter Bread
For darker, moister loaves with crunch and chew, hit up Hunter Bread over in Bicton. Baker Hunter Carlberg learnt his trade at Iggy’s in Sydney and brings the know-how here with highlights including country-style rolls and loaves, perhaps flavoured with rye and caraway or olives (just remember to grab a handsome croissant for the road, while you’re at it). The country rolls are our No.1 pick for mopping up gravy off the plate (buttered of course) during home-cooked delicious winter roasts. Hunter also has an excellent online store for those who prefer to skip the queue and order up big.

Common Bakery
Common Bakery has grown from its sister venture, Bread in Common, building its reputation on the same organic, long-fermented loaves, woodfired in ovens made from volcanic rock. While its bread remains a cornerstone — with Freo favourites like the seed-speckled Common Multigrain, dense German-style rye, and fruit loaf packed with figs, apricots, raisins, and sultanas — the offering now extends to a wider range including seasonally topped slices of focaccia and croissants, like their standout raspberry and pistachio

Mary Street Bakery
Over the past decade, Mary Street Bakery has cemented itself as a Perth institution, with five venues spread across the CBD and surrounding suburbs. The city outpost keeps office workers well-fed with rotating toasties and fresh salads, while suburban locations lean into full brunch offerings with a strong carb-forward focus. While menus vary slightly between sites, the sleeper hit across them all is the cheese on toast. Follow it up with one of their cult-favourite doughnuts, or a rich slice of their chocolate salted caramel cake for good measure.

North St. Store
The famed cinnamon scrolls at Cottesloe’s North St. Store are worth the trip alone, yet there’s nothing quite like satisfying a post-swim hunger with a continental roll. Walk in and you’re greeted by a table laden with freshly baked loaves and rolls piled around a centrepiece basket of perfectly braided, golden fougasse. As you move through, cabinet displays see a rotating selection of seasonal salads, pizzas by the slice, crusty baguettes and fluffy, golden-topped focaccias, brimming with fillings. The Kosher Providore
Arguably, Perth’s longest-running bagel maker, The Kosher Providore in Menora, has been operating since the 1980s and making bagels for over 20 years. Since 2016, “Bagel King” Gilad Davidowitz and his mother, Desi, have owned the business boiling up authentic New York-style bagels in nine flavours. The Kosher Providores boasts a mainly vegan-friendly and gluten-free range, though some, like the Granary, use honey. They’re sold individually, so you can pick your favourites, including sweet varieties like choc chip.

Knead Bread & Coffee
When Knead Bread & Coffee opened in Scarborough in 2019, head baker and co-founder Robby Thomas was determined to make a sourdough-based bagel as close to a Montreal style as he could. Although his bagels aren’t wood-fired, Thomas says they are heavily sourdough-based with minimal yeast to help aid a fluffier texture, which they do using Australian-grown, organic flour from Wholegrain Milling with the Rosemary Salt a fan favourite.
