After an extraordinary inaugural year, Pair’d Margaret River Region returns November 20—November 23 with an even more ambitious programme, firmly cementing the festival as one of Australia’s premier food and wine celebrations. 

The 2025 lineup is staggering—a dazzling roster of world-class chefs, winemakers and cultural icons drawn from both near and far, all converging on this stunning corner of the South West. Over the four days, Pair’d will showcase the finest expressions of Margaret River’s terroir, talent, and stories through unforgettable dinners, tastings, and unique experiences. 

Last year set a high benchmark, but this year, the festival transcends expectations, delivering an experience that redefines what a regional food and wine celebration can be.

Some of the biggest names in global dining will descend on Margaret River this November, with Pair’d delivering a trio of dinners that showcase the region’s growing international pull.

Vasse Felix x Odette

Fresh from winning the World’s 50 Best Chef’s Choice Award, Julien Royer, chef-owner of Singapore’s three-Michelin-starred Odette, will team up with Cam Jones (WAGFG Regional Chef of the Year) at Vasse Felix for an evening set to be a festival highlight. Their menu will explore terroir, blending Odette’s refined French techniques with delicate Asian flavours, paired with standout wines from Vasse Felix’s cellar and expert insights from acclaimed wine writer Erin Larkin.

Voyager by the Sea

Following last year’s visit from Kyle Connaughton of California’s three-Michelin-starred SingleThread Farm, Voyager Estate (WAGFG Regional Restaurant of the Year) will host an extraordinary seafood dinner with Michelin-starred Nathan Outlaw (Outlaw’s) and Sydney’s Josh Niland (Saint Peter). The duo will join head chef Travis Crane for a four-course celebration of the ocean’s best, matched with rare estate wines that highlight the link between sea and soil.

De’sendent x Cloudstreet

WAGFG New Restaurant of the Year De’sendent will welcome two-Michelin-starred Rishi Naleendra (Cloudstreet) for two intimate nights alongside chef-owner Evan Hayter. Together, they will spotlight some of the region’s finest produce—marron, organic vegetables, local meats—paired with exceptional wines from Chardonnay and Burgundy to Champagne, featuring the prestigious French house Krug and local favourite Howard Park. These dinners will promise a luxurious celebration of provenance and place.

Pair’d Beach Club presented by Range Rover

If you miss Nathan Outlaw at Voyager by the Sea, you’ll have another chance to catch him at the Pair’d Beach Club, taking over the stunning shores of Meelup Beach. 

Choose between the Beach Club Restaurant—for a four-course shared lunch by Michelin-starred Nathan Outlaw and Yarri’s Aaron Carr, with paired wines—and more relaxed vibes at the Beach Club Bar, where you can enjoy seafood rolls, beachside bites, and a glass of Margaret River’s best in hand with your feet in the sand.

For an extra touch of indulgence, reserve a daybed and soak in the coast, all set to the sounds of a live DJ and saxophone sets from Mark Turner, Perri Lee, and Feel Estate.

The Grand Tasting presented by Singapore Airlines

Set in the grandeur of Howard Park’s gardens, The Grand Tasting brings together Margaret River’s most iconic wineries for a two-day celebration featuring unlimited tastings of rare vintages, limited releases and winemaker favourites.

Australian culinary icon Matt Moran will be on the pans, serving the produce-driven fare he’s renowned for, while Italian soprano and cookbook author Silvia Colloca takes to the stage with a live operatic performance.

Guests should also book into Museum Masterclasses—intimate sessions inside the Wine Chapel, hosted by WAGFG wine judges and nationally respected wine writers Nick Ryan and Erin Larkin. Consider it a rare chance to dive deeper into the stories and vintages that have shaped Margaret River’s viticulture.

The Grand Tasting at Pair'd

Burnt Ends and Friends 

Dave Pynt, the Michelin-starred chef behind Singapore’s iconic Burnt Ends, returns home to Western Australia to headline a fiery feast at Wills Domain. But the true highlight is the legendary Francis Mallmann, the “Godfather of Fire”, making his long-awaited Australian debut. 

Joining them are Perth’s BBQ King Don Macdonald of Big Don’s (WAGFG Casual Restaurant of the Year), internet sensation Andy Hearnden, and Wills Domain’s own Sergio Labbe and Jed Gerrard. Together, this all-star lineup will put on an immersive feast where guests will roam through chef’s stations where smoke, fire, and flavour take centre stage.

There is also plenty of Perth’s finest talent making the journey south and putting on a show for Pair’d, adding local flavour to the festival’s international lineup. Melissa Palinkas (Young George) will bring house-made charcuterie and canapés to celebrate gamay at Willepsie Estate, while Joel Valvasori (Lulu La Delizia) hosts two Italian-inspired events at Mr Barval Fine Wines.

At New Wave Gathering, Blaze Young (WAGFG Chef of the Year) and Drew Dawson (WAGFG Breakthrough Talent) join street South West favourites Normal Van and Sons of Naples to showcase the region’s food scene and the next brave generation of winemakers all while Grant Smillie and Alex Dimitriades spin tunes on the decks.
