In the next instalment of our new series On The Road With, Scott Bridger, Executive Chef of North Fremantle’s Bib and Tucker, shares with us his favourite off-grid adventure up the northwest coastline, plus the one place he makes time for on the way up.

 

What’s your favourite destination to explore in WA, and who’s your ideal road trip companion?

It would have to be a road trip to Ningaloo and Exmouth for a week of off-grid camping, fishing and exploring with my wife and two teenage boys.

What are some of your favourite pitstops along the way?

After four or five hours of driving, a pit stop at the Dongara Bakery is always on the cards. You’ll find solid homemade pies and the rolls are always on point.

On our way up to Exmouth, staying the night at Wooramel River Station is epic. There’s no better feeling than washing the sweat and red dust off in a thermal spa on the riverbank before eating from the communal dinner cooked over a big purpose-built woodfire pit. You can’t beat it!

Where do you eat when you’re in the North West?

There are some great spots nowadays up in Exmouth. After a day of fishing and diving, Bamboo is the place to go for a juice and fresh salad. Come night, Froth Brewery is awesome, with an offering from an array of chefs from around the world who call it home for the season. Whalebone Brewery is another great spot where you can enjoy live music while sitting on old whale bones under the stars and sharing a couple of great pizzas.

Are you the kind of person to whip up a feast while you’re away? If so, what’s on the menu?

We usually camp off-grid on the Ningaloo coast at one of the stations, so there is nothing there—which is the reason we go. The fishing and diving up there is world class so our meals are derived from what we catch in the day.  There is usually some tuna, cod and jumbo squid on the menu most nights. Simplicity is best when the seafood is that fresh, add a cold beer and the sunset at the end of the day and life doesn’t get much better.

And finally, where do you like to stay?

Winderabandi Station—it’s a good one to two hours from Exmouth but worth it once you get there.
