Dreamt up by The Leederville Precinct, NOM NOM Festival is now in its third year and has become a mid-winter staple for Perth locals looking to shake off the seasonal slump. Tucker: A Journey Through Country with Michael D’Adamo
Thursday, 10th July
Now in its fourth iteration, Tucker returns to the festival program with a four-course exploration of native Australian ingredients, this year led by West Australian-born chef Michael D’Adamo. With a resume spanning Melbourne icons like Cumulus Inc. and Jacques Reymond, Michelin-starred kitchens in London, and our very own Wildflower, Michael brings serious pedigree to this evening where you will be guided through the stories and significance of Indigenous ingredients used for over 40,000 years. You’ll have the opportunity to experience ingredients in their pure form before enjoying them in dishes such as kangaroo tartare with bunya nut toum, BBQ pearl perch with native salsa verde, and 40-day dry-aged beef rib eye with saltbush butter. Sisters Katia and Sabrina Cappadocio of La Fromaggeria bring their cheese-making expertise to an immersive evening where you’ll have the opportunity to savour fresh Italian cheese just moments after they’re stretched and shaped before your eyes. The festival’s finale is one to lock in—Not Really Indian is Servo head chef Jerry Sheeran’s passion project and it’s returning for one night only.
