Experiences

Maison Lassiaille, Metricup, South West

Spend enough time in the Margaret River region and you realise that it’s a magnet for talent whether it be oenological, culinary or artistic. Sometimes the skills of chefs such as Romain Lassiaille blur the lines between the culinary and the artistic. Over two decades this renowned pastry chef and chocolatier has honed his skills from his native France to some of the world’s best hotels. Having made his home in the region, spending five years as the head pastry chef at Pullman Bunker Bay Resort, Maison Lassiaille was established in 2021. It’s a blend of his journey and undoubted skill with the laid back charm of his adopted home.

Need to Knows

Romain is steeped in the rigour and excellence of Michelin-starred restaurants with time in Paris working in grand palace hotels such as Four Seasons Hôtel George V where Restaurant Le Cinq currently holds 3 Michelin stars. From just off the Champs-Elysées, Romain has called Switzerland, Peru and South Africa home. Working across renowned properties such as the Wes Anderson-like Gstaad Palace led finally to establishing Maison Lassiaille in the bucolic surrounds of Metricup. Close to Wilyabrup, the epicentre of the region’s wine industry, it still feels like somewhere for those in the know.

What to Expect

While the High Tea experience has become a special occasion go-to for locals and visitors alike, there is a casual drop in element here as well, whether you’re picking up a bag of madeleines, handmade bob bon, or swinging by for coffee and cake before touring nearby cellar doors. The atmosphere is positively Gallic from the cafe options both sweet and savoury, the selection of  imported goods (mustards, foie gras and pâté), and artwork from celebrated photographic artist Martine Perret. A selection of French vinyl could even see you find a new love for the likes of Joe Dassin. In warmer months a spot in the garden under the shade of a native tree leaves no question as to where you are. The best of France in the heart of one of Australia’s most famed wine regions.

What’s Special

There’s a lot of care and attention that goes into creating a great High Tea experience. It’s perhaps the Michelin years coming through here with an eye on seasonal ingredients, a premium selection of teas, and barista-made coffee. Savoury treats include an authentic croque monsieur, delicate vol-au-vents that could give you a new appreciation for this maligned classic, and fresh baguettes filled with smoked salmon. You may find yourself arguing over what order the jam and the cream go with the freshly baked scones. Diving into pastries and the expertly crafted chocolates everything is brought together by attentive service and the location itself. For those who want to go a little harder than tea and coffee, the team at Maison Lassiaille provide glassware for BYO bubbles.

Getting there

Just 5 minutes drive north of Cowaramup, 15 minutes from Margaret River, and just over 20 minutes from Dunsborough, the Harmans Mill Road location is perfect as part of a day filled with cellar door and gallery hopping.

Children

The experience at Maison Lassiaille is family friendly and perhaps perfect for special birthday treats.

Other Things to Book

Unsurprisingly, Romain’s talents are sought after for wedding cakes and favours. A recent development is weddings and private hire of Maison Lassiaille as a whole.

Notes

The kitchen offers vegetarian and gluten free options on request. It’s worth noting that booking well in advance is always best in high season.
