Wine is a cornerstone of the venues under the care of Dan Morris and Emma Ferguson (they also have Vin Populi) and it is their obvious passion. The wine list at their CBD flagship is a living list, where you’ll find a good degree of change, often, especially on the by-the-glass list. You could describe it as serious, if you were concentrating on the range in price and the winemakers within, but it’s also serious fun. You’ll find rare finds and cult names. It has many of the state’s best and brightest winemakers, with room for labels marked as ‘over east’, and an international focus on France, Italy and Spain (with a few detours to Germany and the United States). Most essentially, the team here knows their way around its pages and you don’t have to be dining to enjoy it. Pull up a chair in the bar, browse, taste, and repeat.
