“Wine lists born of open cheque books, or encyclopaedic wine collections are no longer a prerequisite for a sommelier to be considered top of his or her game. Well-considered wine lists, dedicated to the diverse and ever-changing landscape of Australian wine and drinks, are not much more important than just size or magnitude.

Service is a critical part of a sommelier’s repertoire and it needs to be at the apex of the skills set for a winning sommelier.

A sommelier should comfortably and empathetically work with guests to find the right wine and right price point and perhaps discover something new along the way.

Of course, the character of a venue and the menu, should also be mirrored in a venue’s wine list.”
