Although its strong reputation amongst the traditional wine fraternity has always garnered attention, the move to organic vineyard practices and the resulting years-long farm project that will see a greater degree of hyper-locality is another key element that makes it our regional pick We’ve seen the baton handed from Santiago Fernandez, who kickstarted a change in the kitchen, to Travis Crane, who is now running his own race. The creativity and interweaving of the estate – the vineyards and their output – is all clear in the experience. A restaurant that’s not only imbued with a sense of place but holds immense respect for it.
