If there was a year that reaffirmed that restaurants are a team game, 2021 was it. And if there’s one place that showed it, it was Si Paradiso. Yes, Paul Bentley’s presence – the chef returned home after making it big overseas – has had considerable impact, but his real strength has been in nurturing the talent in his ranks. The result is a crack team, represented most surely by Blake Ellis, Liam Monaghan, Laura Harding and Elijah D’Vauz, but extending out to the pizza oven, the floor, the bar, the wash-up and further. This year, Si Paradiso became not only an essential destination, but a proving ground, its graduates destined for big things. Look out.
