In his role as bar director as part of the opening team at Gibney, he’s created a destination experience in The Gibney Gibson, the bespoke cocktail made tableside from a custom cart. But he’s no one-trick pony, bringing a depth to the wider bar offering that takes in some of the best non-alcoholic cocktails you’re likely to find in the West.
