WA Good Food Guide in collaboration with our partners at Austral Fisheries are excited to announce the return of the West Australian Good Food Guide Young Chef of the Sea competition for 2024.

Building on the existing work of Austral Fisheries in unearthing and nurturing emerging talent in the seafood industry, we will be searching from Albany to Broome and everywhere in between, to uncover the next emerging star seafood chef in Western Australia.

Last year, in the competitions inaugural year, the search saw Yu Hung Cheng (Madalena’s) take out the award, with the prize being the invaluable opportunity of work experience in Sydney under world-leading seafood chef, Josh Niland.

We also brought the finalists together to produce the first edition of the Austral Fisheries Young Chef of the Sea Cookbook filled with recipes for making the most of delicious, sustainable seafood. In this digital cookbook, you will find a mix of achievable home cooking and aspirational project recipes, developed exclusively with premium Austral Fisheries products.

As per last year’s proceedings, short listed candidates will be interviewed by a panel including Austral Fisheries CEO Dave Carter, General Manager Dylan Skinns, WA Good Food Guide Director Georgia Moore and asked to submit three seafood recipes which will be reviewed by a team of some of WAGFG’s most respected and experienced chefs.

Four finalists will participate in a cook off in October at the WA Good Food Guide Cooking School at European Concepts, judged by industry legends chefs Russell Blaikie and Stephen Clarke, as well as WAGFG Editor-in-Chief Georgia Moore and Austral Fisheries General Manager, Dylan Skinns. The winner will be revealed on stage at our major hospitality awards night which is to be held in early 2025.

The winning chef will work with us to develop a seafood cookbook with easy, at home recipes to be distributed digitally to our audience, with all recipes featuring Austral Fisheries products. There will also be a very exciting prize offered to the winner to be announced later this year, which includes a once in a lifetime travel and work experience opportunity.
